Hungry for something new? Rockets returning to campus this fall will find updated dining hours and two fresh retail concepts ready to serve up bold flavors.
As part of the changes, The Eatery @ Student Union will now open at 7 a.m. and close at 2 p.m., shifting a half-hour earlier to better serve student-athletes and those needing an earlier breakfast option. Hours for other dining locations remain largely unchanged from last fall and spring semesters.
Copperhead Jacks, replacing Tu Taco in Thompson Student Union, will serve a Tex-Mex menu featuring burritos, bowls and quesadillas along with house-made salsa and hand-smashed guacamole.
Ciao Bella, a made-to-order pasta concept, will open in Ottawa East where Erbert & Gerbert’s previously operated. The addition comes in response to student feedback from the fall 2024 Voice-to-Vision satisfaction survey, which identified made-to-order pasta as the top cuisine missing on campus.
“Student feedback is at the heart of all our decisions, and we are excited to bring these new concepts to campus,” said Aaron Skees, director of marketing for Rocket Dining. “Both brands offer fresh, flavorful options that we know our campus community will enjoy.”
The Yo-Kai Ramen Robot located in Parks Tower has been removed. Dining Services is exploring new robotic vending machine solutions for spring 2026 semester.
